This is such a favorite in our house. I love making it as an after-school snack for my kids!
Makes 1 flatbread
1 piece of your favorite Flatbread
1 ounce soft goat cheese (chèvre)
½ cup thinly sliced Brussels sprouts
3 tablespoons snipped dried apricots
2 tablespoons chopped walnuts, toasted (optional)
½ teaspoon honey
½ teaspoon lime zest
Preheat oven to 425 degrees F. Bake crust on oven rack 4 to 6 minutes or until golden and crisp. Spread with cheese and top with the remaining ingredients and drizzle honey all over.
Slice it up and serve!
