The Big Tossed Salad

I've never been big on making salads.

 

For some reason this recipe, that's hardly a recipe, has really clicked for me, so I'm sharing it in hopes that you'll try it and discover for yourself how easy, delicious and SATISFYING a salad can be.


Lots of greens & herbs : make it your own 6-8 cups of romaine, green leaf lettuce, spinach, arugula, basil, parsley, cilantro. Whatever you like

 

Half of a cucumber, quartered lengthwise and then chopped. Sometimes I peel it depending on the cucumber.

 

Two pieces of fruit, chopped

So far all of my salads have included an apple, which I really like. For the second piece of fruit I've used mango and peaches. 

 

Other veggies (optional) I usually add some peppers and onions, sometimes a tomato

 

DRESSING

You won't believe how good this is!!!

Maple Syrup & Citrus (orange, lemon, lime) 

I have a small jar with a lid and I pour in about 1/4" of maple syrup and top it off with fresh squeezed citrus, at least the same amount as the syrup plus a little more.

 

Hot pepper (optional) I like to finely chop a hot pepper like habanero or thai chili and add it to the dressing. 

 

Add everything to a large bowl. Toss well with all of the dressing. Time to eat!
