This is such a popular treat at our house. I make it with pears, apples, and cranberries or rhubarb whenever they’re in season. Next I’ll try peaches! Delicious, easy & healthy.
For the filling:
3 cups about 4-5 honeycrisp or gala apples or pears, thinly sliced
1 tbsp flour or arrowroot or cornstarch for gluten-free
1 tsp cinnamon
1/3 cup pure maple syrup
For the topping:
1 cup organic rolled oats
2 tablespoons coconut sugar or light brown sugar
1 teaspoon cinnamon
2 tablespoons coconut oil, melted
Directions:
Preheat oven to 375°F.
Combine apples along with the rest of the filling ingredients in a bowl.
Pour into baking dish and even out with a spoon.
In the same bowl, combine the topping ingredients; add and spread over apple mixture.
Bake uncovered, for 55-60 minutes or until browned and bubbly. Serve warm or at room temperature.
