Beans and Greens Cauliflower Gnocchi

  • 1/4 cup water

  • 1 (12 ounce) bag frozen cauliflower gnocchi

  • 1 (15 ounce) can no-salt white beans, do not drain

  • ½ teaspoon salt & pepper or to taste

  • 4 cups kale, arugula, spinach or other greens

  • Zest and juice of one lemon

  • Red pepper flakes (optional)

  • 2 tablespoons fresh herbs, chopped (i.e. sage, parsley, chives, basil)

  1. Heat water in a large skillet over medium-high heat. Add gnocchi and cook until they start to soften and defrost, about 3-5 minutes.

  2. Add beans, include soaking liquid. Allow to simmer until the gnocchi are tender and the beans are heated through, about 5 minutes. Season with salt and pepper. Carefully stir in greens and herbs of choice and allow to wilt.

  3. Remove from the heat and add zest and juice of the lemon. Stir in and Serve.
