KALE SALAD
1/2 bunch kale, stems removed and roughly chopped
1/2 bunch green onions, roughly chopped
1 cucumber, roughly chopped
3 celery stalks, roughly chopped
2 large tomatoes, roughly chopped
3/4 cup chopped asparagus
DRESSING
Juice of 1 to 2 oranges
1 garlic clove, finely minced (optional)
1 chili pepper, finely chopped (optional)
1 to 2 dates, finely chopped (optional)
Place the chopped kale and green onions in an even layer in the food processor and process at high speed until very finely chopped. Scrape down the sides as needed, and then remove and add to a large bowl.
Please the cucumber in the food processor and pulse until chopped, for about 3 seconds. Remove and add to the kale and green onions.
Place the celery in the food processor and pulse 1 to 2 times, until chopped. Add to the bowl.
Place the tomatoes in the food processor and pulse 1 to 2 times, until roughly chopped. Add to the bowl.
In a small bowl, mix together the dressing ingredients. Add it to the salad and toss until well combined.
