My Original Chai

In a large pot add:

  • 8 cups of water

  • 2 cinnamon sticks (or 8 pieces)

  • 2 star anise seeds

  • 1 teaspoon black peppercorns

  • 8 cardamom pods

  • 1" piece of fresh ginger, sliced thin

  • 1/2 teaspoon whole cloves


Cover and bring to a boil, then remove from the heat and let steep for at least 30 minutes to an hour. Strain and drink. Sometimes I leave it in the pot on the stove and just strain a cup at a time, reheating before I pour. I also have a teapot from Ikea that I'll strain it into. I leave the spices in the strainer.

It is naturally sweet as it is. Feel free to add a tea bag, regular or decaf and some honey if you want to play with it a little. May I recommend that you try it just as it is first before adding any sweetener or tea to it.
